Rocket Sauce

When we leave Austin and go on vacation, we make it our mission to find out what and where the locals eat. It allows us to really experience the culture of a place. In 2003, we went to Barbados and while we were there we noticed that every table had a bottle of habanero pepper sauce on it. Much like you see ketchup on every table here in the States! We tried it at every meal and just plain fell in love with the way it began with a tangy flavor, but quickly became a ball of fire in your mouth. After lugging 2 or 3 liters of it home with us, we decided to come up with a recipe of our own (Rocket Sauce). We wanted to stay true to the culture and flavor of the pepper sauce, but bring the spice down a notch so that the average person could tolerate it.

In our recipe, using very little habanero peppers allows you to taste the sweetness of the pepper instead of the white-hot heat you get from most pepper sauces. We think this makes our Rocket Sauce more versatile in the kitchen, so you can use it on a wide variety of dishes. It comes on like a sweet Southern pickle, but then takes off like a rocket!

How We Make It

  1. Rocket Sauce begins with the selection of fresh onions and parsley.
  2. Our local producer (Sun Mountain Foodworks) chops all the ingredients in a gigantic mixer and adds water to get just the right consistency.
  3. Then they bottle it, seal it and add the product label. We had a Graphic Artist friend of ours (Kat Sherby) design our new label and we use a local Austin printer (Hyde Park Label) to print them for us.

Ingredients

Rocket Sauce contains onions, lemon juice, distilled vinegar, parsley, mustard powder, turmeric, marjoram, thyme, black pepper, salt, cloves, allspice, mustard seeds, scotch bonnet peppers, and water. It has a flavor that is a cross between pesto (without the nuts and oil), spicy mustard, and Caribbean pepper sauce.

Recommended Uses

The beauty of our Rocket Sauce lies in its versatility. Whether you're grilling outside, sauteing on the stove, or having a bloody mary, you can use Rocket Sauce to provide a slow herbilicious fire to anything you put in your mouth. For spicy grilled chicken, we end up basting the chicken with Rocket Sauce before we throw it on the grill. We also eat a lot of baked or grilled fish around our house, so we drizzle a little Rocket Sauce on the fish just before serving. Rocket Sauce is also a great way to spice up egg dishes like scrambled eggs, deviled eggs, and egg salad.
