Cracked Malabar Saltburst
Our farmer's market customers requested a high-quality salt and black pepper combination, so we created
our Cracked Malabar Saltburst. Although we like big chunks of black pepper on our own steaks, we
toned it down a bit for the general public and use coarse ground pepper instead. It might be simple and
basic, but sometimes that's all you need.
How We Make It
- Cracked Malabar Saltburst begins with the purchase of coarse ground
Malabar pepper imported from India,
but purchased from a small local supplier. We mix this pepper with Portuguese sea salt.
- Then we bottle it, seal it, add the decorative rafia, and the product label.
We write and design all of
our own labels and product literature and have it printed at a small local printer. When possible, we use
recycled paper.

Cracked Malabar Saltburst contains Malabar pepper and Portuguese sea salt.
Recommended Uses
We generally use Cracked Malabar Saltburst when we need the rustic pungency of black pepper on our food.
It makes a great brining spice, especially if you add some fresh herbs to the brine. We sprinkle it in the
breading we use on pan-fried chicken cutlets, but its also great on ribeyes, shrimp, tuna steak, and mashed
potatoes. Use it sparingly though. A little goes a long way.
