Mediterranean Rice

About once a week, we make this rice recipe at home and sometimes we bring it to dinner parties. The tartness of the barberries is key to making this rice really unique. We discovered these delicious berries at our favorite Persian restaurant (Alborz Persian Cuisine), but you can purchase them by the pound at Pars Deli (8820 Burnet Road) in Austin.



32oz Jasmine or Basmati Rice
1 tsp table salt
1 stick unsalted butter
2tsp olive oil
2 cups barberries
1/2 cup Za'atar Saltburst
1/2 cup almonds or pistachios (optional)

  1. In a large pot, begin boiling 2 quarts of water.
  2. Rinse rice 5-6 times in a large bowl until the water is very clear. This removes the starch from the rice and makes it less sticky.
  3. Add the olive oil and table salt to the water.
  4. When the water starts to boil, add the rice and stir a bit.
  5. Let the rice cook for about 15-20 minutes, then taste to see if it is the texture you prefer. If you like it softer, continue boiling until it is just right.
  6. When the rice is done, remove it from the stove and drain the water.
  7. Mix in the butter, Za'atar Saltburst, barberries, and nuts (if used).
  8. Enjoy!
