Citrus Acorn Squash

Am I the only one who yearns to take home some of the golden, colorful squash at the market with no idea what to do with it? Well I finally caved in and bought a small acorn squash after discussing its natural sweetness with the produce guy... In this recipe, I used our Orange salt to compliment the sweet buttery taste of the squash, but you can also use our All Spiceburst if you prefer the flavor of allspice.

1 medium acorn squash
2 tsp Orange Saltburst
2 cups sliced mushrooms of your choice
2 cloves fresh garlic
1 cup sliced purple onion
1/2 stick unsalted butter

  1. Slice the acorn squash in half and remove all the seeds.
  2. Heat the oven to 400 degrees.
  3. On low to medium heat, saute the butter, mushrooms, onions and garlic in a skillet for about 15 minutes or until the onions are slightly translucent on the edges.
  4. Rub half the Orange Saltburst all along the inside of the squash.
  5. Fill each half of the squash with the mushroom and onion mixture.
  6. Put the squash on a baking sheet and bake for 45 minutes or until the squash is soft and tender.
  7. Remove from the oven and sprinkle remaining Orange Saltburst on top of each half.
  8. Serve and enjoy!
