Chipotle Roasted Turkey

One turkey
Chipotle Saltburst
1/4 cup olive oil

  1. Put a thawed or fresh turkey (breast up) on a rack in a shallow pan.
  2. Insert a meat thermometer into the thickest part of the thigh and leave it there while the turkey is roasting.
  3. Brush or rub the turkey with olive oil and enough Chipotle Saltburst to coat it evenly. For a 12lb. turkey, we typically use 5 tbsp of Chipotle Saltburst.
  4. Place the turkey in a preheated 325 degree oven.
  5. When the skin is a light golden color and the turkey is about two-thirds done, cover it with aluminum foil to prevent it from drying out.
  6. Using the table below, start checking for doneness a half hour before its supposed to be done. Always measure the temperature in the innermost part of the thigh, wing or the thickest part of the breast.
  7. Let turkey stand for 15 to 20 minutes before carving to retain its juiciness.
  8. Put Chipotle Saltburst on the table so guests can add more salt if they prefer.
